Product Description
Kasumi means mist in Japanese. The border of the blade on a Kasumi has beautiful waves that look like a mist. It is made of two materials; blue or white steel and soft iron. The waves are the border of hard steel and soft iron. When hard steel is covered with soft iron, it becomes less fragile. Kasumi knives are easier to maintain than Honyaki knives.
Most frequently used to prepare sashimi and slicing raw fish. Can also be used to cut large cuts of meat without bones. Not to be use with frozen foods. Handle is made of Rosewood, which provides a secure grip and prevents slipping. Handle is D-Shaped that fits in hands comfortably.
Natural sharpening stone is recommended for sharpening.
Recommended for beginner to professional chefs.

History- Since 1550, Yoshihiro, Masamune, and Yoshimitsu were known as the best sword craftsmen in Japan. After his death, Yoshihiro's apprentices continued to use his technique and traditional skills. The techniques used to make samurai swords are used to make Yoshihiro chef knives. Yoshihiro knives are now recognized to be one of the best chef knives in Japan due to the rich history and techniques that are applied from sword making to chef knives.

I have had this knife since March of 2012 and have used it 5 days a week at a sushi restaurant. I love the balance and feel of this blade and it lasts me through a shift or two until I have to sharpen. I will say that the steel feels softer and the tip of my blade broke whilst sharpening on a 1000 grit whetstone though I re-shaped it easily. Still like this blade in my arsenal!

I have owned a few Yoshihiros over the years and these knives are absolutely amazing. As a Chef I am really particular about what I use in the kitchen. These knives are just killer. I gave this knife to a buddy of mine who is also a chef and he fell in love with this brand. The blade on this knife holds the most amazing edge and is a MUST if you work with any preparation of fish from sashimi to butchering fish. I cannot express enough how phenomenal this knife is.When I first ordered this USPS screwed up the order and it never got to my friend but after calling Yoshihiro, the guy there overnighted one that moment. The customer service there is unmatched. I just love this company and product.
