What a great knife! Im a professional chef, first japanese knife. I don't think I'll ever buy German steel again, espacially at this price!. This knife is as functional as it is beautifull. What a value.

I am a cabinetmaker and sometimes a Sous Chef for my wife, and I cook. I know a good product when I see one. I also know about sharpening since I spend a lot of time on my hand tools. My new Yoshihiro Damascus Japanese chef Knife Gyuto 8 is as good as it gets. I spent a lot of time sharpening some of my other knives after using them, only to have to sharpen them again the next time I needed them.My new Yoshihiro knife stays sharp consistently and is comfortable to use.This is a winner.
