A couple of things to consider...

I have NOT tried this sharpener, review is based on the available YouTube vid from the company:1. Because it sharpens both sides of the knife at the same time, you cannot raise a bur, which means you are kind of flying blind.2. For the same reason, it cannot be used to sharpen single-edged Asian knives, because obviously you only have one side to sharpen, and this would ruin the knife.

Very sharp & comfortable to use

My wife and I both use these an absolutely love them. We were replacing a set of J.A. Henckels knives that we've had for probably 10 years.We were happy with the knives being replaced, but they had riveted handle slabs that were beginning to come loose (one handle slab on our chef's knife eventually fell off, prompting us to seek replacements). Due to the failure of our other knives, we wanted knives with either integral handles (just the metal) or expoxied handles. Would have preferred the former, but the reviews and price for these were good enough that we decided to try them.We did not expect such a tremendous difference between these and our old knives with respect to their sharpness. I don't know if our old knives were EVER this sharp (we routinely used the steel and occasionally a knife sharpener made for kitchen knives). With our old knives, my wife had started to buy NY strip roasts and filet roasts that were already trimmed because removing the silver skin, etc. was too difficult. These knives have totally changed that - really cut through those materials very easily. I had resorted to using an electric knife to cut roasts, briskette, etc. but now use the chef's knife that came with this set - slices through them with very little effort (and without tearing up the meat).My only (perhaps unfounded) concern is that the epoxy used on the handles will eventually wear out, making me regret not holding out for integral handles. Nothing about the knives indicates that this will be the case, however.

Worth every cent

I always figured good kitchen knives would be a little better-maybe hold their edge slightly better, sharpen up a tad bit more, etc, but these things really surprised the heck out of me. Its like cutting everything with a razor blade and a huge improvement over generic knives. You will see the difference. I freak out now if someone else uses them, and heaven forbid they put one in the sink!!!!

Ordered these for Christmas, was excited to have them as my husband loves to cook and our knife set has needed replacing for some time. I researched to find a set that would withstand heavy use and remain in good shape for years to come. These knives are made very well!! I have never had a better set! They feel great in hand! Not only did the set arrive quickly, the supplier met a competitors deal for a free gift, even after the shipment was made, without further cost to me sent me quick emails with tracking numbers for the second shipment!! I have to say this was by far the best experience I have had with buying on Amazon. Cutlery and Beyond has gone beyond my expectations in providing not only a high quality item at a great price, but amazing service.

They won me over

I got these years ago from my mother. They are AMAZING! I love the rubber grip handles and they have stayed sharp on their own for about 10 years! Someone bent the tip a little on one of them and I was curious about the potential of replacing them. At this price I think I'll just fix it myself and resharpen them.I prefer Gerber knives for hunting/pocket knives but since owning these I have purchased other Kershaws and they are very high quality. When the time comes I WILL repurchase these.

Good knives, just a little dangerous on one handle

These are amazing knives and really sharp. 20 Years ago my husband purchased a set of these knives for me and I have loved them ever since. They sharpen well when needed and are still going strong for me.NOW, my complaint is: I purchased this set of knives for my mother and father for Christmas and as I was using the butcher knife which is the longest knife I noticed that it wasn't just like my set. The end of the knife that attaches to the handle is not covered all the way and is somewhat sharp since it comes to a point like a corner, my knife is covered and fits in the handle just like all the rest of the knifes. This one to me is very dangerous. I called amazon to exchange them and they graciously said yes and and so I waited and when I got the e-mail it showed a refund minus a restocking fee. NOT what I wanted at all since I thought the one knife was just a mistake from the manufactures. I wanted an exchange, So I call them and they did make it right with me only now I have to reorder them and guess what the price is now up $20. I really wanted the knives, but I can tell from the pictures that the butcher knife is made the same way so maybe they are all like that. So in my opinion buyer beware!

The combined riveted handle design is combined with a contoured shape to add comfort and control. The Classic Ikon adds a rear bolster that acts as a counter balance when using the knife. This second bolster adds significant blade control. Classic Ikon has a unique forward bolster as well. The forward partial bolster is designed so you can sharpen the complete length of the blade. This bolster is also curvered inwards to allow your fingers greater control while holding the knife by the blade. Located in The Cutlery Capital of the World, Solingen Germany, the Wusthof factory history goes back as far as 1814 when the company was listed with the Duchy of Berg. To this day, the company remains family owned. Throughout it’s history, Wusthof has focused almost solely on the manufacturing of forged knives for the professional chef and home cooking enthusiast. Wusthof uses a special blend of German steel through out the whole length of the knife. The ingredients of this steel are proudly etched on each blade. These are beautiful, extremely sharp, well made steak knives. Holding them, you can just feel the quality, and they cut through whatever it is that they're supposed to. They clean easily (I don't run them through the dishwasher though you're supposed to be able to), cut well, and feel great when I hold them. An expensive luxury, but I think well worth it.

Needs initial oil, then wax. Like a fine car, it will serve you well for years if you take care of it. Can't let water linger on the surface of this item. Keep it dried off. You can hear the quality as you chop and cut on this block.

started to crack less than a month

i purchased this chopping block and used it for less than a month and already started cracking (picture enclosed). we had purchased two other Boos but they have been great for over three years.

Buy at your own risk

I bought one of these a couple of years ago thinking it would be the last chopping block I would buy. Unfortunately, the one I bought is now separating. There is a 4" crack running along one of the glue lines that runs all the way through the block from top to bottom.
